This refreshing mojito gets topped with champagne for a celebratory twist on the classic cocktail.
Ingredients
1 1/ 2 ounces rum
1 ounce fresh lime juice
3/ 4 ounces simple syrup
5-8 mint leaves
2 dashes aromatic bitters
champagne, to top
Method
STEP 1
Add mint leaves, syrup and bitters to a highball glass and muddle gently.
STEP 2
Add rum, lime juice and some nugget ice. Swizzle and top with champagne and more ice. Garnish with mint.
