1.5 oz London Dry Gin
0.5 oz Tio Pepe Fino Sherry
0.5 oz Beet + Cucumber Syrup
0.5 Fresh Lemon Juice
2 oz Club Soda
2 oz Tonic


Shake all ingredients less the Tonic and Soda. Strain into an ice-filled glass, and top with soda and tonic. Garnish: Sliced Candy Cane Beets.
