Apple Mojito Cocktail


This drink celebrates the exact moment that summer meets fall.

Ingredients

About 10 fresh mint leaves
ice cubes
Splash of sugar syrup, recipe follows
65ml apple juice
85ml vodka
2 red apple slices, for garnish
2 green apple slices, for garnish


For the simple syrup
115g sugar
120ml water

Method

1) Crush the mint leaves with a muddler or pestle and place in a tall glass.
2) Top with ice, the simple syrup, apple juice and vodka.

3) Garnish with red and green apples slices and serve.

Simple syrup:
1) Add the sugar and water to a pan and bring to the boil until the sugar dissolves.

2) Allow to cool before using. Store unused syrup in the refrigerator for up to 2 weeks.
