For The Prosecco Passion
Ingredients
1 tablespoon passionfruit, pulp, reserving husks for garnish
1 tablespoon peach liqueur
Prosecco, chilled, to top up
1 scoop mango passionfruit sorbet
Method
STEP 1
Place the pulp into the bottom of a Champagne coupé, add the peach liqueur, . Top up with prosecco and gently drop the scoop of the sorbet into the glass. Decorate with the reserved passion fruit husk.
For The Pomegranate Scorpino
Ingredients
1 tablespoon vodka
1/2 lemon, juiced
Prosecco, chilled, to top up
Agave syrup, To Taste
1 scoop pomegranate sorbet
1 teaspoon pomegranate seeds, for garnish
Method
STEP 1
Place the vodka and lemon juice in a Champagne coupé and top up with Prosecco. Stir the Agave Syrup. Gently drop the scoop of sorbet into the glass and decorate with pomegranate seeds.

For The Margarita Fizz
Ingredients
2 tablespoons tequila
Club soda, or tonic water, chilled
1 dash agave syrup
1 scoop lime sorbet
1 lime, slice, for garnish
Method
STEP 1
Pour the tequila into a Champagne coupé. Top up with club soda or tonic water, as preferred, and mix in the agave syrup. Gently drop in the scoop of sorbet and decorate with a slice of lime.
