Blackberry Champagne Mule

Pass the champagne! Make a refreshing Blackberry Champagne Mule with frozen blackberries, ginger beer, vodka and a splash of champagne! 

Blackberry Champagne Mule. The only way to make a classic Mule better? Add smashed blackberries, go heavy on the lime, swirl in the vodka, add a good splash of ginger beer, and top it off with a good amount of bubbly champagne. Trust me. It's a very good idea. 
The bubbly keeps everyone coming back for seconds.

This is such a simple drink. First, gather your ingredients. Blackberries, fresh mint (I used the petite mint lemon that I’m currently obsessed with), limes, a little bit of vodka, ginger beer, and of course, champagne (sparkling wine works too).

Muddle together the blackberries, mint leaves, and fresh lime juice until those berries are all smashed down. Muddling the blackberries with the mint infuses the mint flavor into the drink creating that classic minty Moscow Mule flavor.

Now, add the vodka, and then shake, shake, shake.

At this point, strain the drink into your glass and top off with ginger beer, then champagne.

Very SIMPLE, but also the prettiest, so refreshing, and just oh so very good.

1/4 cup fresh or frozen blackberries
8 leaves fresh mint, plus more for topping
juice from half of a lime
1 1/2 ounces vodka
2 ounces ginger beer chilled
champagne, chilled, for topping


1. In a cocktail shaker or glass jar, muddle the blackberries, mint, and lime juice, squashing everything to release the juices. Add the vodka. Fill with ice and shake until combined.

2. Strain into a champagne or wine glass with ice. Add the ginger beer and top with the champagne. 
Garnish with mint. 
Drink and enjoy!
