Campari Prosecco Cocktail


A Classic Campari Cocktail AKA Campari Spritz made with 3 simple ingredients and garnished with fresh strawberries and oranges. Not only does this look beautiful it tastes so delicious and makes a great aperitivo…. with a few snacks of course!


How gorgeous is this cocktail?! Ruby red, filled with prosecco, bitter flavours, juicy fresh strawberries and oranges, I mean it’s bea-utiful!

If you love an Aperol Spritz (my all-time favourite cocktail) then you’ll love this! Not gonna lie, it’s way more bitter and not as fruity but just as delicious and refreshing.


Here’s What You Need to Make it

Campari
Prosecco
Soda or sparkling water
Fresh strawberries and oranges, optional

Note that the fruit is optional but really makes a great difference, especially the strawberries. It’s not traditional but absolutely my favourite way to make this Campari cocktail!


How to Make a Classic Campari Cocktail – Step By Step

Fill a glass with ice then top with Campari (photo 1) followed but prosecco and sparkling water (photo 2). Garnish with slices of fresh strawberries, oranges or fruit of choice.


Other Variations

If you find Campari too bitter then there a few ways to adapt this to make it fruitier which I love.

  • Half and half Aperol and Campari – cut the Campari in half and replace it with Aperol. It’ll be slightly less bitter and have a hint of orange.
  • Half Campari with orange – cut the Campari in half again and add in some fresh blood orange juice. It’ll be less alcoholic and more fruity.
  • Half Campari and prosecco – cut the Campari in half and add in more prosecco. It’ll have more fizz and be fruitier.
  • Half Campari and passion fruit – cut the Campari in half and add a splash of passion fruit liqueur.


When it comes to cocktails I’m all for simplicity and this takes all of 2 seconds to whip up. No making sugar syrups and all that jazz although if I’m feeling fancy I might give that a go.

But really, cocktails are best when they’re quick, easy and enjoyed in the sunshine with plenty of nibbles!


Food to Serve with Campari

Why not try serving it with Marinated Olives, Sausage and Stracchino Crostini, Bruschetta al Pomodoro or dips such as my Creamy Pesto Dip or Taleggio and White Bean Dip. What better way to kick off your time to chill and relax!

Ingredients

2 parts Campari (2oz/60ml)
3 parts Prosecco (3oz/90ml)
1 part soda water or sparkling water (1oz/30ml)
2 fresh strawberries , sliced
2 sliced blood or fresh orange
ice

Instructions

Fill a glass with ice then top with Campari followed but prosecco and sparkling water. 
Garnish with slices of fresh strawberries, oranges or fruit of choice.
