Crostini, an Italian appetizer, is crusty bread with different delicious toppings. Here we’ve highlighted fresh tomatoes, basil and mozzarella.
Ingredients
12 slices Italian bread, each 1/2 inch thick
1/4 cup olive or vegetable oil
1 large tomato, chopped (1 cup)
3 tablespoons chopped fresh basil leaves
1 tablespoon large capers or chopped ripe olives
1/2 teaspoon salt
1/2 teaspoon pepper
12 slices (1 ounce each) mozzarella cheese
Steps
1 Heat oven to 375ºF. Place bread slices on ungreased cookie sheet. Drizzle 1 teaspoon oil over each bread slice.
2 Mix tomato, basil, capers, salt and pepper. Spread half of the tomato mixture over bread slices; top each with cheese slice. Spread remaining tomato mixture over cheese.
3 Bake about 8 minutes or until bread is hot and cheese is melted. Serve hot.
Pizza Crostini
Mini pizzas topped with mini pepperoni = WIN. Spoon marinara onto bread, top with shredded mozzarella and mini pepperoni, sprinkle with dried parsley, and bake until bubbly.
Pimiento Cheese
Mix together a little mayo, chopped pimiento peppers, and shredded cheddar, spoon over toasts, and bake until pimiento cheese is warmed through.

32 slices French bread, 1/4 inch thick
1/4 cup olive or vegetable oil
3 roma (plum) tomatoes, diced (2 cups)
3 cloves garlic, finely chopped
1/2 cup shredded Parmesan cheese
2 tablespoons chopped fresh basil leaves
1/2 teaspoon salt
Steps
1 Heat oven to 425°F. Place bread on ungreased cookie sheet. Brush 2 tablespoons of the oil on bread. Bake 4 to 5 minutes or until light golden brown.
2 Mix tomatoes, remaining 2 tablespoons oil, the garlic, cheese, basil and salt. Place about 1 tablespoon tomato mixture on each warm bread slice.
